It’s not rare that we receive this question, so we thought it best to go through this more at length and try to highlight all that’s important to know about. 

So, first things first: what is a raw cake?
Often described as “conscious desserts”, raw cakes are free from wheat, gluten, egg, dairy, soy and refined sugar. Raw cakes are made with a mix of fruit (both fresh and dried), nuts, seeds, vegan products (butter and milk), but also spices and superfoods. 

As for the process itself, it’s important to know that no baking is involved. Instead, all ingredients are perfectly blended, poured into cake tins, and then frozen until they reach the perfect consistency. This process is bound to create balanced and nutritious cakes.

In our particular case, we make our cakes and other desserts with high-quality natural ingredients that are expensive themselves. The basic ingredients are:

  • Nuts – almonds, macadamia, cashew, walnuts etc. 
  • Healthy vegan oils and butters – coconut, cocoa etc. 

Also, in addition to using the best ingredients we can, we also try to use locally-sourced and organic ingredients, which also contributes to raising the price, due to being produced in small batches, being hand-picked or even due to the special knowledge involved in producing said ingredients. Even the certification itself for organic ingredients is a cost for the producer, which means it becomes a cost for us – however, that also means that we know for sure what we’re using in our desserts, so it is worth it. 

One other factor to keep in mind is that we do not use sugar, flour or eggs, which are much cheaper ingredients that would help fluff the desserts and stretch out the more expensive ingredients, but that would mean to compromise on our vision regarding health. Keeping away from the classic dessert ingredients also allows us to create healthier cakes, which are more accessible for people with certain allergies and intolerances and which fit in more diets, so that’s why our cakes are gluten-free, egg-free, dairy-free, refined sugar-free, and natural. Some are even vegan!   

But coming back to the price – without using the classic dessert ingredients, we have to find alternatives that will not only make the cakes super tasty, but which will also give them structure. Basically, we have to make sure that when you get home with your dessert, it’s not a messy, soupy, melty weird thing. In order to achieve that, we had to invest in special equipment and a lot of recipe development and testing. In our case, it took a few years to achieve the perfect texture and pinpoint the perfect conditions in which the cakes not only hold their shapes, but also taste their best.

The good news is that, because we use so many high-quality ingredients, our products are super nutritious and also intensely satisfying. This means that you’ll definitely satisfy that sweet tooth with just one serving 😉
